Cell Salad


I call this Cell Salad since the 2 main ingredients are celery and celeriac. This is one of the quickest crunchy and unique salads you'll ever enjoy. Celeriac, like most root vegetables, is available during the fall and winter in supermarkets. It's a salad that transports well to a party or a pot luck supper.

1 celeriac root, peeled
1 medium head of celery, stalks separated
2 Tablespoons lemon juice
2 Tablespoons olive oil
Salt and pepper to taste (optional)

  • Slice the celeriac in quarters. Using a sharp knife or a mandolin slicer, slice both the celeriac and the celery into the thinnest slices you can

  • Place the sliced vegetables in a bowl. Sprinkle with lemon juice and olive oil. Add salt and pepper if desired.

For Christmas you can add chopped Italian parsley and some red pomegranate seed or finely chopped red pepper for a colorful holiday presentation.

Makes 4 servings of salad. Each serving counts as 1 vegetable, 1 protein, 1 whole grain and 1 fat serving.
