EAT RIGHT

Fruit Crisp


Crisps can be a satisfying dessert. They taste great, are easy to make and satisfy your need for fruit and for whole grains.

4 peaches, pears or apples
2 Tablespoons of lemon juice
2 Tablespoons of butter
1 Tablespoon of oil (try walnut oil for added flavor if you like)
1/3 cup of whole wheat pastry flour
2/3 cup of old fashioned oats (not quick or instant)
1 tsp cinnamon or cardamom
1/3 cup of walnuts, chopped coarsely

  • Set the oven to 375 degrees F

  • Spray a 9 inch pie pan or an 8 inch square baking pan with a non-stick spray

  • Peel, core and cut the fruit into ¾ inch chunks and place in baking pan. Sprinkle on lemon juice and toss

  • Combine the rest of the ingredients except the walnuts in a food processor just until the mixture is chunky. Add walnuts and pulse 3 times

  • Pour the crumb mixture onto the fruit and bake for 20-25 minutes or until just lightly browned


Makes 4 servings. Each serving counts as 1 fruit, 1 whole grain, and 2 fat servings.
