Whole Grain Grilled Cheese Sandwich


This is an updated version of the classic comfort food sandwich. It is made with whole grain bread, low-fat cheese and includes a vegetable serving as well as a healthy fat.

2 slices of sprouted whole grain bread (such as Ezekial bread or Alvorado Street Bakery Bread)
1 slice of a lowfat cheese (such as Light Jarlsberg or 2% American Cheese)
½ roasted red pepper (jar of red peppers packed in water), drained
1 tsp olive oil or several sprays of olive oil from an olive oil mister

  • Assemble sandwich

  • Heat a heavy skillet using medium low heat. Add olive oil to pan or spray olive oil directly onto one side of the sandwich

  • Grill just until the first side starts to turn golden brown. Flip the sandwich and continue to grill for 1-2 more minutes or until the cheese is melted


Makes 1 sandwich. Each serving counts as 1 vegetable, 1 protein, 2 whole grains and 1 fat serving.
