Wholesome "Hearty" Muffins


These muffins get their moistness from oat bran and applesauce. They are so easy to make, you can delegate your kids to make them. They freeze well and reheat in the microwave in less than 30 seconds on a cold morning for a heart-healthy breakfast or snack. They have less than half the calories of store-bought muffins and cost much less to make.

1/3 brown sugar
1.5 cups oat bran
1 cup unbleached white flour
½ cup whole wheat flour
1-1/2 tsp baking soda
1-1/2 tsp baking powder
1/2 tsp salt
4 egg whites (or 2 whole large eggs)
1 cup unsweetened homemade or jar applesauce
¼ cup canola, grapeseed or light olive oil
½ cup frozen blueberries or golden raisins (optional)

  • Spray 12 muffin cups with non-stick spray
  • Preheat oven to 400 F.
  • Place dry ingredients into a bowl or 2 quart glass measuring cup
  • Add eggs, applesauce and oil to dry ingredients and mix until all ingredients are blended (do not over-beat)
  • Pour or spoon batter into the muffin tin
  • Bake approximately 15 minutes or until moderately browned.

 

Makes 12 muffins

Each muffin contains:
210 calories, 6 gm protein, 28 gm carb, 4 gm fiber, 10 gm fat, 1 gm saturated fat, 0 cholesterol, 350 gm sodium, 192 gm potassium

Each muffin counts as 1 whole grain, 1 starch, ½ protein and 2 fat servings.
