Oven Baked Oatmeal


There's no excuse to skip a hot breakfast with this make-ahead version of oatmeal. It's also great if you're having a crowd for breakfast . . .

2-1/2 cups old-fashioned oats (not quick oats)
1/2 cup firmly packed brown sugar (optional)
1/2 cup craisins or chopped dired apricots
1/2 cup chopped toasted walnuts
1 tsp cinnamon
1 tsp fresh ground nutmeg
1/2 tsp salt (optional)
3 cups nonfat milk
1 whole large egg & 3 egg whites, lightly beaten
2 tsp vanilla extract

  • Preheat oven to 350 degrees F

  • Spray a 2 quart glass or ceramic baking dish with cooking spray

  • Toss the dry ingredients in a large bowl to mix

  • In a 1 quart glass measuring pitcher or bowl, blend the liquid ingredients together.

  • Pour the mixture into the prepared baking dish. Bake approximately one hour (check at 45 minutes since oven temperatures and speed can vary widely).

  • When the center is set and firm it's done. Cool for 5 minutes and serve immediately or cover tightly and store in the refridgerator.
