Curried Scallops
This is the quickest way I know to cook scallops. This method can also be used to cook shrimp. It's a delicious and beautiful way to serve scallops when in season. Be sure to use curry powder that is fresh and full of flavor. (Discard any curry powder that has been on your shelf for more than 12 mos). Besides imparting a rich flavor to food, curry powder contains curcumin which as been associated with a lowered risk of Alzheimer's disease.
1 pound of scallops
1 Tablespoon olive oil
2-3 Tablespoons of curry powder
Salt and pepper to taste (optional)
- Heat olive oil in a large heavy skillet (preferably well seasoned black iron) over medium high heat
- Sprinkle curry powder in a shallow bowl. Dip the top and bottom of each scallop into the curry powder, shaking off any excess.
- Sauté the scallops quickly on each side for just a couple of minutes until cooked through.
- Serve these with cooked vegetables, brown rice or on a bed of mesclun with a light viniagrette.
Makes 4 servings. Each serving counts as 3 ounces of a lean protein.
